You can use the omni orb config file and set the
endpoint=giop:tcp:the.nic.address.here:port#here
That may help

Pass your server the -ORBendPoint option, like
server -ORBendPoint giop:tcp:the.right.ip.here:port
This will put the right ip address into your IOR strings.
